June 4, 2013- Ninth Day of the 24 Day Challenge

      I had to wake up early, so this was a great test of how well the Spark would work. I had to get up at 5am to get ready for work- though, my son kept my up about every hour.

     Took my spark, probiotic pills and catalyst. I then drank down my Herbal Cleanse packet, same as before. I got ready for work- Right before I left I made a Meal Replacement Shake- though I added 1/4 cup almond milk to sweeten it a little bit

For a snack I ate peanut butter

I then had MORE spark (i'm starting to drag!)

For Lunch I ate 3 celery sticks with tuna (added 1 tsp olive oil mayo) and had 1 Lundberg Brown Rice Cake

For a snack I ate- you guessed it! MORE PEANUT BUTTER

After work, I decided to get more cooking done. I was getting bored Bored  BORED with plain old tuna and celery crap. Bleh

So, for dinner I made Applesauce chicken again- I love it soooooo freakin much! I also made Tomato Soup (paleo recipe)- For snacks in the future I also made zucchini fritters.... the recipe i used made 12 very small ones... so I would eat 1 or two at snack time...(I got these two recipes from: A Beginners Guide to Paleo Diet- By Niezel Ann Veracruz).

So making the applesauce chicken- I made 4 breasts...but ate 3oz of the chicken... i made a huge batch of soup...but only ate 3/4 cup (how much vegetables I am supposed to have). I also had a Lundberg Brown Rice Cake, just so I would get my complex carbs.

For my last snack I had a few Kale Chips (come Kale baked in the oven with a tiny amount of sea salt).

Recipes:
Zucchini Fritters
-1 large zucchini (diced ridiculously)
-1/4 cup onion
-2 eggs, beaten
-1tbsp parsley
-1tbsp almond flour (I make my own- so i know there aren't any additives... i get shelled, slivered almonds  and put it in the blender and use the "pulse" option)
-1/4 tsp pepper

-Preheat oven to 350 (or use coconut oil spray and fry them on the stove)
-Dice zucchini or use food processor- when done, blot zucchini with paper towel to absorb moisture
-Whisk eggs, add flour, then pepper and parsley
-stir in zucchini and onion into egg mixture
bake for 12 min (untol browned), or fry until browned on stove

Tomato Basil Soup (best soup I have honestly ever had in my life!)
-2lbs tomatoes (cut in half or 1/4)
-1 onion, diced,
-2tbsp olive oil
-3 cloves of garlic
-1 cup vegetable stock
-1/2 cup chopped basil leaves
-1/2 cup canned coconut milk
-1 tsp dried oregano
-1/4 tsp pepper

Preheat oven 375
- Foil cookie sheet and place tomatoes (cut in 1/2 or 1/4), diced onions, and diced garlic on baking sheet. then drizzle with the olive oil and sprinkle with pepper
-Bake 45 min (I would check every 15 min and turn them and make sure the pepper was even all over the vegetables)
-In a big pot, put vegetable stock in it and transfer the baked vegitables to it. Add the basil and oregano. Bring to a boil.
-Blend soup with blender. Then return to pot and simmer for 30 min.
-Stir in coconut milk and serve hot.
